And yes, I realize that the message it gives is that the process is going to take days to complete, but if the process takes longer to complete than the Torchlight games are offered for, then I have to question the entire process. How is this going to work out?

I've got the same issue. I've been "in the queue" for two days now.

I know my steam account settings are public, and GOG Connect has worked on other titles for me before.
I had this for two days. As time is running short, yesterday I filed a support request and they fixed it for me in about three hours.
However, it's the weekend now and I'm not sure if they're working until Monday :(
I've also been waiting for days as well with the same screen.
Well the period has ended, and my account is still trying to connect. I feel like I'm being penalized because their system works, quite literally, many thousands of times slower than every other equivalent system I've ever seen.
Still waiting here as well. Not that it really matters one way or the other, but if you're going to add a "feature" you might make sure it works in a timely manner. How can a simple electronic transaction take "several days" to complete? It's not like I wrote them a check and they're waiting for it to clear...
Did any of you contact Support bout this?
Nice. I feel like I have been bamboozled.

It doesn't work and there is no way to ever disconnect your Steam account from GOG. I guess they got what they wanted and now it's ha ha sucker.

Like I stated above, I contacted support and they fixed it for me in three hours.

The opportunity for Torchlights is probably gone now, but you should contact support to signal your disappointment and ensure it won't still be connecting come the next offer.
I had this issue several times. I asked every time support for fixing it. And they solved it within couple of days.
