I usually just use dried.. probably a few teaspoons (or more, I do like my apple pie spicy) I imagine fresh would work if you diced it finely though, assuming you don't mind chewing on the occasional bit.

IMO a normal apple is a cooked apple. Eating raw apples is unpleasant and akin to eating raw potatoes.
