It can be skipped if you want. But from the duo of Styx and Arkhail, I like the latter more. Too bad he is only in the first game :(

The 2nd and 3rd game are about on par with each other.

Yes, except for setting and characters, there is not much story-wise between the first and the other two games. Mostly a bit of back story is missing, but the two last games are self contained as well.

They are also very different in game play, the first an RPG, the other two stealth games.

Than I think we have almost all big titles here but "World War Z". But I hope that will change someday, too?

I went ahead and bought the first 2 games, couldn't resist. :P Will pick the 3rd one up in a future sale after I've played the first two likely.
How do these games compare to the Thief series?

That's probably not up to GOG but to the devs/publishers of the game. I am pretty sure that reworking the game to use GOG API instead of Steam API is quite time consuming and therefore costly so they decided to not even try and offer us a free DLC instead. Imo it's great that they at least try to do something to compensate for the missing MP - but of course it would even be better to get the exact same features. Still, because of what I said above regarding the costs and effort I doubt it will happen. You should contact Focus on their discord to get a definitive answer. They are replying quite fast and friendly.

Yeah that's the sense I get too. I hope eventually it gets easier and simpler for devs in the future.
