I put tomato on everything so you might want to skip that step, but maybe try a spicy sandwich?
Smoked jalapenos (chipotle peppers, if you're buying them pre-made) and hearty slices of avocado. Salt and pepper to taste. Tomato and thin-sliced rings of onion. Put it on thick slices of an airy bread, like a ciabatta or a lighter sourdough, toasted if you prefer. Oil and vinegar is probably better than mayo or mustard for this sandwich but obviously use condiments to taste. If you've got a strong tolerance for spicy and don't want the smoky chipotle flavor, you can probably use habaneros instead or whatever your favorite spicy pepper is.
