Are you asking for recommendations, or giving them?
So you want more action/less reading?

You played KOTOR, how about KOTOR 2 the Sith Lords?

Dragon's Dogma has solid combat from what I read, will play it soon.

If you liked fallout 3 and new vegas, try the Shadowrun series or the older fallout 1 and 2

Neverwinter Nights series
Stalker series
Torchlight series
Titan Quest

And Baldur's Gate 2 is a must of course

Give some of these a look:

Icewind Dale
Gothic series
Risen series
Elex
Two Worlds series
Hellblade
Shadowrun series
The Saboteur
Wasteland 2

Maybe something in that list will pique your interest.

Then play something totally different. All those games are long, heavy games. Play something like Shadow Warrior which is pretty short mindless action.

Your list and mine would be very, very, VERY similar. Reading yours I was almost wondering if someone had read my mind.

Differences of note:
1) I thought Skyrim was quite a bit more then "meh" although certainly not Fallout 3/NV but still a very, very good game... right up there with Morrowind (although for some reason that's hard for me to explain... nostalgia I'm guessing... Morrowind just holds a special place for me amongst the Elder Scrolls series... when I'm playing Skyrim I have to turn music off because whenever I hear the Morrowind music I get the uncontrollable urge to fire up and play Morrowind).

2)Fallout 3/NV became my all time Favorite game of any genre replacing a series that had resided there for several years (which had itself replaced Betrayal at Krondor which resided there for a decade. In other words in twenty years I had 3 games earn and hold that title.) But then Fallout 4 replaced Fallout 3/NV.

I guess those are the two biggest differences and other than that we're almost identical. So it seems like I'd be just the person to recommend something but.... I don't know... I fear leading you down the wrong path especially if you have to spend money to get them and don't like them. I'll say what I'm thinking though...

First of all, while Betrayal at Krondor is still on my all time top 5 and one of the best RPG's every made IMO, I will NOT recommend that because of your statement about graphics. I've played it several times in the past 10 years and it can be brutal looking at those graphics. It's such a great game underneath that I don't mind... but I can absolutely understand if others do. I noticed some things were actually affecting gameplay (minor ways) the graphics were so hard to look at. (For ex: seeing holes in the ground which often contained loot could be hard depending on your monitor and such.. especially it seems the bigger the monitor the worse it is. The green and brown pixels just seem to run together in a blur and you can't tell if it's a hole in the ground or a road.)

I will however recommend the game(s) that replaced Betrayal at Krondor at the top of my list and resided there until Fallout 3/NV. See my avatar. Now I recommend this with pause too because I will warn you up front: the controls in Gothic 1 and Gothic 2 are INCREDIBLY hard to get used to. You basically have to press TWO keys/buttons at the same time to do things. I used a Logitech controller and mapped all the key strikes to it and then once I got used to it it was a breeze... and I absolutely head over heels fell in love with the games. Before that, they had sat on my shelf for over two years as I would try and play them using KB/M and would rage quit before 15 minutes were up. But, if you can get past the controls and the rather dated (but not bad) graphics, Gothic 1 and Gothic 2 are masterpieces IMO.

Two Worlds is another that held me and I've got probably 500 hours into. It's not as good as any of the titles I've mentioned here IMO, but it is a very good... well... a very FUN game imo. There are some things that I would argue aren't so... good... but man it's a fun game.

Another game I've played MULTIPLE times if you're into the Diablo like hack and slashes is Divine Divinity. Just a great game IMO. In fact, IMO that's where Larian Studios did their best work. The game was great (except for the bitch at the end which to this day I've never beaten... they over powered her too much).

Wasteland 2 is a very good game as well. And if you can stand 90's style graphics, I highly recommend Fallout 1 and Fallout 2 and Planescape Torment (Now I vehemently disagree with almost everybody on Planescape Torment in that IMO it's NOT THAT GREAT or even good of an RPG. But it is, without a doubt, a GREAT GREAT GREAT game... just IMO the RPG elements are not the greatest I've seen in games. Story is AWESOME. Gameplay is AWESOME. Atmosphere is AWESOME.)

Fallout 1 and Fallout 2 are VASTLY different from Fallout 3/NV/4 though, so you may not like it. It's more in line with KOTOR I would say (others may disagree) than Fallout 3/NV/4 (which to me are more hybrid FPS/RPG's whereas Fallout 1 and 2 are more "true" RPG's. But again... that's just my opinion.)

And if you want to try something different then I'll tell you one of my other all time favorites despite it not being anything close to anything you mentioned. It's an RTS and it's called Age of Empires. The first one (with the Rise of Rome expansion). Age of Empires 2 and 3 were, IMO, nowhere near as good. But that I'm told is because of my age. So, if you're like me (older) mayhap you will like the first one as well. I play that often to this day. I can play a scenario in two hours or so and be done. It's won't lock you in like a long RPG will. It's one of those things to do for a few hours to get away from an RPG for awhile... at least that's how I look at it.

Geez, look at the length. No one will read this and I don't blame them. Sorry. I'll stop here despite having a couple other possible recommendations. Good luck. I hope you find something that grabs you and runs with you.

For a similar reason - maybe getting burnt out on really long games - I'm going to suggest Driftmoon.
My recommendations:

Opus Magnum
TRI
Psychonauts
Tower of Guns
One Finger Death Punch
Creeper World 3
Gunpoint
Super Hot
Red Faction: Guerrilla
RimWorld
Factorio
Two Worlds II
Heat Signature
Torchlight II
Borderlands I / II
Middle-earth: Shadow of Mordor

and some others I forgot...

Oh I do want to at least also mention this one. Great game.

ADDED: Since this forum is owned by the same folks that made The Witcher I also want to point out another difference I had with the OP's ratings above. He rated The Witcher 3 "meh" and The Witcher 2 "More meh". I can't comment because believe it or not, despite owning all 3, I've never played them. (Fired up The Witcher 1 a couple of times and it did look interesting to me.)

Jade Empire for something similar to KOTOR.

All great suggestions, OFG, except this one. The OP said he doesn't want to read reams of text anymore, and PS:T - great as it is - is nothing if not reams of text.

Oh, guess I missed that. That pretty much rules out everything pre-2000 doesn't it? I can't think of any RPG's in 90's that didn't have quite a bit of reading. Of course, Morrowind had LOTS of reading and that was post-2000.

The Might and Magic games weren't too bad text wise. It's a good enough series too, but I don't know if the graphics will be good enough for OP.

Good point about the graphics. But I will say they are sort of "all over the place" The earlier M&M games the graphics are difficult. But IIRC 8 or 9 had pretty darn decent graphics. Of course, I thought they weren't as good as the earlier games though. LOL
