KOTOR 1 is "hardest" (not that hard, it's still quite easy) at the start when you don't have lightsabers or force-powers...later on, when you can have a party full of Jedi, it becomes very easy. Definitely a case of flawed difficulty progression.
Age of Wonders 1 and 2, because your hero essentially becomes a demigod.

KKND 1 once you unlock the strongest infantry unit.

XCOM : UFO Defense, and Terror From the Deep, once you can mind control aliens. It knock the difficulty of the game so much that I make a point of not using mind control at all in playthroughs.
MY favorite genre of game are CRPGs, but most of them suffer heavily from this. Once you get your character/party to high levels, it usually means they can steamroll pretty much anything. It's one reason I tend to not enjoy high level characters and one of the reasons I like Baldur's Gate 1 over Baldur's Gate 2

Yes, level scaling. Something that I personally hate. Not because I want to steamroll everything, but because it makes it rather pointless to progress your character, as you never run into a challenge that's too hard and never run into one that you can walk all over. IMO, a game is better when you can encounter both situations.

But what I was referring to in my previous post are games where there really isn't any challenge at all once you hit high levels.

Deck 2 of the Star Forge was definitely harder than the final boss battle. Only took me about 2-3 minutes to beat final boss with level 20 scout/sentinel.
Mass Effect... that fucking fight against the Krogan warmaster... everything else was piece of cake afterwards.

I can't remember it in that much detail tbh, only thing I still know is I found battling through the waves of enemies in the Starforge quite tiresome...it wasn't really challenging, and quite repetitive, but it took a long time.
Generally was too easy once you had a party of jedis and can spam attacks with flurry and powers like speed.
The combat is definitely the weakest part of the KOTOR games imo,
