I have the old Interplay releases. Is there any reason to get the Bethesda ones while they're $2 a pop? I think they just changed the splash screen, but maybe I'm wrong.

There is no reason to get them.

The game is the same but the old Interplay ("classic") versions have lots of bonus content that the current version does not have so it is the superior version.

If you own the original ones, the only reason to get the goodie-less re-releases is a checkmark in the GOG catalogue. Up to you, if that's worth $2 a pop.
Since you already own the Interplay releases, pretty sure that's a pretty solid "no".
Are the "new" versions censored? Gotta watch out for invisible rug rats in some versions.

Unless you really dislike the Interplay Logo for some reason, no.
