On my original fallout disk there was a folder, that contained a F1 Tech Demo and A Pip-Boy screen saver (It had Pip boy and falling green bombs) . I'm sure the Fallout 2 disk had similar. So why aren't these goodies on GOG.com?

It's possible that GOG was only able to provide what they were given, but this is a good question. Maybe we can get an official response?
What is the tech demo?
Also, the pip-boy screen saver is available here.
The tech demo is of a knight. You can move it around.
Any news?

My Fallout 2 disk has an "Exclusive Preview!" of the Alternity Players Handbook and Gamemaster Guide, in .pdf format.

well you could contact support and ask if they'll add it, i can't remember having these features.

Publisher changed from Interplay to Bethesda, and I guess GOG couldn't keep the same deal.
