In the original release of the game, you could only upload scores to the web if you completed product activation. Since product activation is not required in the GOG.com release, you really can't upload your scores without a valid serial number. Try contacting GOG.com technical support and see if they can supply you with a key to register.
I know it's not the same, but you can check the high scores of the top 100 players for every single table on http://www.dream-pinball.com, under the High Scores tab.

Yup, that's great, thanks. I'm guessing as a casual player my ability to upload would have little to no effect on the online scores anyway!
