Today I beat BG1 and naturally after I defeated Sarevok I got a final save. Later I realized I didn't have the golden pantaloons on me when I beat the game so I backed up the final save file (plus some just before the end) onto a different drive and deleted the save file from within the Save File Directory in BG.

However, after going back to get the pantaloons and defeating Sarevok the game no longer generates a new Final Save File. I've uninstalled and reinstalled it twice now and still no new Final Save File. All it does is tell me it's made a save file but when I look, there isn't one.

You don't need a Final Save, all you need is the character file that the game creates of your PC after beating Sarevok.
A manual save just before the battle would serve the same purpose as the Final Save. The only real point of the Final Save was so that people who installed the expansion after beating the game could load it and be transported to the expansion pack place.
