I'm just interested in seeing if many games did this
So far I've found this, BG1, Icewind Dale 1 and 2, Neverwinter Nights 1 and 2, Zafehouse Diaries, and Grimrock.

Does anyone know of others? =)

Some games you can do it, but they don't make it easy. Here's what I can recall offhand:

Baldur's Gate 2, Shadows of Amn
Baldur's Gate 2, Throne of Bhaal
Temple of Elemental Evil
Arcanum: Of Steamworks and Magick Obscura
Planescape: Torment
Star Wolves
Shadowrun Returns
Legend of Grimrock
