I saw that the game is available on GoG (“In development”, which is if I’m right the equivalent of Steam’s early access) and I was wondering if it’s possible to have the game on GoG rather than Steam (I don’t mind having my steam key made invalid) ?

You almost certainly won't get far by asking here, wolcen developers don't frequent this forum too much. You can try to ask them on Steam forum, or (better) ask them directly by e-mail.

In general, there is no automated way to do what you ask, and doing it manually is a hassle and risk they might not want to undertake. There is GOG Connect service where you get GOG copy of a game you own on Steam (no invalidation), but when a game appears there it's always time-limited offer, and I never saw it used for in-dev game. Or they could try to manually verify you own it on Steam and send you GOG code, but risk that you give it to someone else instead of reclaiming it yourself.
