I have the pdf for the regular manual that is accessed via the dropdown menu from GoG Galaxy but cannot find the "pilot's manual" that is referenced in this manual (e.g., p. 42). Nor can I find any sort of global "push this key for that" chart. Can someone help?

The UK and US versions of the manual were different, there were two manuals for each, and it can get rather confusing.

I personally have a full copy from the defunct 'ReplacementDocs.com. and would be willing to upload it to GOG if it there are no copywrite difficulties. Otherwise, a 'search' for images of the quick reference card will give you the three pages you need (and other game related stuff too).
Unfortunately, the QR 'Map' is formatted to fit text and not match the real map. Also, it has been rotated to the left, so you have to mentally rotate and guess.
*Note: When you are in the NavMap, alt-h will pop up a list of all the key commands. You can have your map display all the navpoints with numbers or just hit 'f', type in the navpoint you want, press enter (not numpad enter), and that navpoint will be selected.

Personal hint. The Manual tells you to communicate with your cargo ship and tell it to start heading to your destination. Then you are told to wait until it does so and follow after it has 'jumped'. ONLY do this with cargo ships you are escorting on a mission. Otherwise, jump first and start attacking enemies so your cargo ship is not the focus of their attention.
