I got bored waiting for GOG to solve a Privateer 2 joystick issue, so I busied myself visiting all 69 systems in Privateer and charting the much-disliked asteroid fields. I have the list in an Excel spreadsheet, and if there's any interestt, I'd be happy to post it.
Why does my view keep changing view (right, left, back) in Privateer 2? Happens when I move joystick attempting to follow target. Is there any way to lock in F1 (forward view)?

Which joystick are you using? There is a possibility the game is recognizing the stick as a hat switch while at the same time picking it up as a joystick.

I'm using a Thrustmaster T.Flightstick X. Any advice would be appreciated. So far, I have not even been able to get my first mission (the Shondi escort mission) past the first or second jump.

Are you playing the the game through DOSbox or using Darkfix?

Doxbox. Was using Thrustmaster T.Flight Stick X. It turns out that view changed whenever I twisted the stick, so I went to Alt-O and changed the joystick option from Thrustmaster to Two-button Joystick, and that solved the problem.

I suggest you try Darkfix, that way the game should support at least the throttle to an extent (*) since it updates the game to the windows version, though you will have to recalibrate every time you load the game because for some reason it doesn't save calibration data.

(*) Unless it's one of those games that gets screwy with a joystick with more than three axles, my HOTAS is programmable on a firmware level so I could load a profile that disabled all the extra stuff to use it with the game and I don't remember if I ever loaded the game before setting up the profile using the refcard or manual as a reference (I tend to play a lot of old games so I do certain things in advance just in case), from what I understand the HOTAS X doesn't have such built-in capabilities but you could try using Joystick Gremlin.
