I saw one of the reviews on GOG's product page mention that this version does not have multiplayer.

However the product page itself lists multiplayer as a feature.

How does multiplayer work in the GOG version of Warhammer 40,000: Gladius - Relics of War?

Yes it is included. Direct connect and an always populated server list are the multiplayer choices.
