Does every Origin game that opens with the 'OriginFX' intro support MT32? I'm having trouble getting it to work on the Worlds Of Ultima games (I tried using the same method explained here for setting up MT32 sound in Wing Commander, but the stuff I was told to change in the WC conf files aren't present in the WoU conf files).

Follow the instructions as given and it should be OK.
Do I need to do anything to the game files after running the patcher? Do I need to run it from DOSBox directly, rather than the GOG-supplied desktop shortcut?

You don't have to change anything; it updates the DOSBox configuration files directly so shortcuts etc. will still work as expected.

Arkose: For UW1:

1. Go to C:\GOG Games\Ultima Underworld 1 and 2\Ultima Underworld 1\UNDEROM1\DATA
2. Edit uw.cfg (with Notepad or the like)
3. Replace 6 -1 -1 -1 sound with 2 7 220 1 sound
4. Save your changes.

For UW2:
1. Go to C:\GOG Games\Ultima Underworld 1 and 2\Ultima Underworld 2\UNDEROM2\DATA
2. Edit uw.cfg (with Notepad or the like)
3. Replace 5 -1 -1 -1 sound with 2 7 220 1 sound
4. Save your changes.

If you changed the installation folder then the paths above will differ but it will still be under the respective Ultima Underworld 1\UNDEROM1\DATA folders etc.
I tried this and now the music/sound effects work perfectly... except they're only playing out of my left headphone. I tried both with a set of clip-on headphones and with my trusty headset and it happens with both.

Do you have any idea what could have happened? It only started happening once I edited the cfg files.

august: If I would have gotten a better experience just pirating the game and running the installer from dosbox directly then that defeats the whole point of gog.com
Not necessarily, now that they're offering newer titles. One can easily pirate virtually any game; that's your choice. But by choosing to spend money on a legitimate copy, you're supporting something.

If this still bothers you, you could email Support about the issue. (That's the best way to make changes around here.) You could technically pirate from now on, but consider the "message" you're sending.

Try this instead: http://www.gog.com/forum/ultima_series/sound_in_ultima_underworld_is_playing_music/post8
Is there a difference between MT32 and general Roland sound?

Never mind.
I didn't read properly before answering.
I've been trying this for a little while now and I can't seem to get it to work. Sound comes out but it's wired, sounds like an IRQ error or something.

Ultima Patcher can be used to set up MT-32 support. Try that and see how it goes.

I don't actually have Ultima I'm just interested in MT32 and weather or not it's worth using for other games.

Oh, well the quality of implementation depends on the game. Some games were built with the MT-32 in mind so sound great with it while others were aimed at general MIDI and so support the MT-32 but don't make full use of it. There are even a few games where the MT-32 is listed in the sound setup program but doesn't actually work in-game (e.g. Daggerfall, which will crash at launch if the MT-32 is selected).
