When I press the Print Screen button on the keyboard, the game pauses for a second or less so I'm assuming it's saving the pictures somewhere. However, I can't find where the screenshots are? I'm on Windows 7.

It's saving the picture to clipboard. ;)
Use any external program (eg. Fraps, Bandicam, etc.) if you want to save multiple pics to selected destination.
I don't know where they go but I go to 'PAINT' click 'Paste' and they magically show up. At that point I save it to a folder I can actually find. :P
If you don't already use it, IrfanView is an excellent free picture viewer/tool.
Just open it and press Crtl + V to paste your screenshot in and save it wherever you like.

Ah okay, I thought it had a built in screenshot option since the screen was pausing whenever I press PrtScn.
If you want to make screenshots without having to do the copy-paste dance, you can hit Shift-F9 and you will save a PNG screenshot to the \AppData\Roaming\runic games\torchlight\screenshots\ directory.
