The irony here is that if this was a good update, it would take an eternity to update and maybe even go into the "

But since it's a
garbage one, even the poor offline installers were infected quickly with this...
I don't understand why GOG doesn't keep the previous version for the offline installers, especially for cases like this.

You can't... unless you use GOG Galaxy and pick the older version from there.
When GOG fans start with the preservation BS, let's keep in mind that they don't provide a way to revert to old installers, unless you were lucky enough to back them up. They just tell you to use Galaxy.
If I wanted to use a client, I would be using Steam, since that one at least allows me to download every previous depot (unlike Galaxy, which only allows the non-hidden ones).
