Having successfully installed GOG Galaxy and updated all the way from 1.08 to 1.31 to activate the DLC...the game now constantly crashes, and Roach won't render...after everything was fucking perfect with 1.08.

Has anyone experienced anything similar? How did you fix it.

"Roach won't render". You have a corrupt installation. Either a mod, if applicable, is causing issues or your game has not updated correctly. Use the Galaxy Verify/Repair function. Yes, again if necessary. The game does not crash for no reason, and objects not rendering is a sure sign of a corrupt installation.

Word, maybe it's an issue from jumping through so many versions at once?

It's possible, since the changes became very broad at some point. My advice is to uninstall the game, download the current installer and install afresh.
