Will we be stuck with some default choices like ME2 none-PS3 version or will we get to choose when we start a new game what our choices in number 1 were, ala ME2 PS3 version?

Nope the save files are for some NPcs to recognize you and your actions and for to add some Witcher 1 stuff like the Raven Armor , don't worry.
They won't affect choices or gameplay as far as i have read :)
Still you should grab The Witcher 1 is only 4,99$ here on GoG :D i am playing is and having lots of fun!

I think i read somewhere that you have choices you can make before the game starts and that affects the game. I'm not 100% sure though.

The save does reflect some choices you've made from TW1. It also lets you import money and inventory besides the other stuff mentioned.
