Is there anywhere I can see what version number of The Witcher Enhanced Edition I am running ?

I have the Mac version.

Find your witcher.exe file (in your The Witcher Enhanced Edition\System directory) and hover your cursor over it. You'll get a pop-up box with information including the version number.

Or, right-click on your witcher.exe file, scroll down to "Properties," then click on that. From the pop-up box, choose the "Version" tab.

The version I have (completely updated boxed version, not the GOG version) is 1.5.0.1304.

Thanks for all that but I forgot to state I am running the Mac version, OP edited.
