From what I see, 1.2 was released on March 10 on Steam
https://store.steampowered.com/news/app/1293160/view/3051724324556557678

But Galaxy is showing version 1.0.183 as the installed version (up to date) and even the offilne installers show the same version... so is this out of date? or are the Steam/GOG release numbers different?

I think it's up to date. Version 1.0.183 was build on March 9 and the offline installer has been updated on March 11 as you can check here:

Is the game pretty playable? What's everyone's thoughts? Can't seem to find an answer :(

The game is extremely playable. The only issue you'll have is if you want to stream it, it'll make most systems weak in the knees when the dual screen showing the physical and spiritual worlds at the same time show.

It's no biggie, you won't even notice an fps drop on desktop, most likely. Plus, the story is so worth playing, any remaining performance issues are worth dealing with imo.

If you want to see a little bit of game play, I have a playthrough here: https://www.youtube.com/playlist?list=PLOLI8WsMAm4HSCXihuhtuHaSvsd7vIwmW

The gameplay was pretty much as is. As I said, definitely worth picking up.
