The AI dynasties they have been enhanced recently, but they still need some more work. Later on the supply at the market will be a lot better.
But intermediate products will not be available all the time and/or in the numbers you need for your businesses. You can purchase them in the front stores of other businesses, you can produce those intermediate products on your own or you can use your warehouse (available once you are a patrician) to store those intermediate products when they are available at market. In this cases you can setup trade routes at your businesses and supply them from your warehouse.

We have had the marketplaces running as individual markets with own prices and stockpiles, but the businesses had too much supply problems. For example, the mine always sold its iron at the nearest marketplace in a village, so the other markletplaces - especially those inside the city's borders - got poorly or never supplied. You had to travel half the ingame day to a market at the far end of the map to get your hands on needed supplies.
We tried out a lot of things to make the situation better, but finally we dicided to combine all marketplaces of a city to one large market.
