Like the last patch we got a couple of days ago was 2.2.6, which is beta, instead of 2.2.5. Is this just me? I don't remember ever doing anything on Galaxy like switching on betas.

Normally GOG users don't receive beta patches since, as you note, there is no such option in Galaxy to opt in. However, Stellaris recently had an absolutely botched patch in the 2.2 release that basically rendered the game unplayable, so when the beta patch became available for Steam users someone made the decision to distribute it to GOG users. Since we don't have the option to opt in or opt out, the decision was made to opt us all in as the lesser of two evils. We've been on the beta patches ever since then.
yes the beta version IS the current patch on gog i.e, we are on the test server

you get 6 new flags, a new planet ui, smarter | harder AI to fight and a few bug fixes but you can always roll back if you don't like these
Isn't that... kinda reckless? A beta is a beta because it's not fully stable and bug-free.

technicity beta = no new content but may still have bugs... its the final test phase before public release

as a gog player you get to test new stuff and (unlike steam) you also have the option to roll back 5 versions so no I don't consider it reckless but if we didn't have the roll back option I could see your point

As much as I conclude from the offical Stellaris forums, 2.2.6 is the current stable-patch since yesterday as they decided to skip 2.2.5 in the stable-branch (2.2.5. never went out of beta although it was the available here on gog). Meanwhile the Linux version remains on 2.2.4...

When the released version is literally so bug-ridden as to be unplayable, there's really not much to lose. The 2.2 release was completely botched. I haven't had much time with 2.2.6 yet, but as of 2.2.5 they still hadn't gotten it to the same stability the game had previously.
