I just tried to use UJR with vJoy as a means to get the X-55 working. Problem is, the installer hangs and never completes so I can't use this method to fix the issue. Is there any other way to get the X-55 to work with Xwing vs Tie Fighter? If not, can anyone point me in the direction of the cheapest compatible joystick? I'm currently using Windows 8.1

Doesn't the Saitek X55 have a proprietary mapping software?

Also, XvT should be compatible with any joystick as long as windows recognizes it as joystick number 1, of course not having an external throttle I can't guarantee for those but usually it should recognize at least the stick without issues.

I saw AngryJoe playing Tie95 on twitch with a HOTAS (a cheap thrustmaster t-flight X) without issue but then again the thing seemed to require only one USB port.

Of course if the issue is actually with the throttle, the software with my joystick has a "mapped mode" that allows to merge multiple USB devices (all of the same brand of course, never had to use it because as I already said I have no separate throttle) into one for these cases so perhaps the software Saitek uses has the same function.
