Multiple guides I've seen say to change something under advanced settings, but i go into display and see that I do not have that option

Create a shortcut to JK.exe and add -displayconfig to the target field so that it looks like this:

"C:\GOG Games\Star Wars Jedi Knight - Dark Forces 2\JK.EXE" -displayconfig
