I own Star Wars Jedi Knight II on Steam, but it was such a waste of money. Not optimized well at all. How is the gog release? Also, is the first Dark Forces any good? I remember it vaguely from when it first came out and playing it at a friends. That was like when I was 9 or 10. Wow.

I have both Dark Forces and Dark Forces II: Jedi Knight (which also includes the expansion Mysteries of the Sith) here on GOG. I did buy the first Dark Forces on Steam, a while back before it came outo n GOG. And yes, you are right at how bad it optimized for modern systems.

On GOG, both games run PERFECTLY! They are optimized really well for modern systems. I am still in the middle of my first ever playthrough of Dark Forces, where as I have already played Dark Forces II and beat it a couple times several years ago and I haven't finished Mysteries of the Sith yet... Then again, I had Dark Forces II and Mysteries of the Sith on disc and I still do. But overall, the first Dark Forces game is basically a Star Wars version of the very first DOOM game. And Dark Forces II/Mysteries of the Sith is more like its better known sequels (Jedi Knight: Jedi Outcast and Jedi Knight: Jedi Academy).

So, I strongly reccommend playing through the games in order as you actually get to witness the evolution for the character Kyle Katarn. But, since you asked which Dark Forces game is the best, then I'd have to say go with Dark Forces II. Nothing beats an engaging narrative with great gameplay, and you can never go wrong about the live -action cutscenes :)
I think they're all great and like TheDarkerSide recommended, play them all in order!

My personal favorite of the series is actually Jedi Academy. While its kind of a spin-off in that it no longer follows Kyle Katarn I loved the enhanced saber combat and the varied locations. Every mission was unique and you get to create your own character, light saber style and choose the mission order.
I own CD retail and Steam version of JK2. Why was the steam version of JK2 a waste of money? The game runs like the CD version for me.
The lightsaber combat & powers vastly improved with Jedi Outcast onwards - became the focus of the game.

But my favorite will always be Dark Forces 2: Jedi Knight.

Great level design with secrets/puzzles and some vertical paths; at a time when most games stuck to one-axis.
Memorable music
Film style cut-scenes (I was bit disappointed with Outcast that had crappy in-game cinematics)
Gun play is viable right to the end
Still looks good today.

Mysteries of the Sith has a memorable level with a Rancor - I think Jedi Academy may've copied this too.

Outcast and Academy are tied for me. The former has the better story.

Some of the Academy missions are interesting but I didn't like the mission selection feature - there's some interesting levels you won't see - if you pick an alternative level.

Dark Forces is still decent but it has aged - it's a lot more straightforward i.e. Doom style.

I'm pretty sure you can do any and all missions in the game, you just select the order. The game is organized into 3 sets of 5 missions and for every set you are required to do 4 (I think) missions and the fifth can be skipped if you want.
