I just finished the demo and will be buying the full game. The demo game exit screen says that the progress made will not be lost. However, this may not pertain to buying the full game after completing the demo. Will progress made in demo carry over to full game when full game is purchased

Yes. I've completed the dem before I bought the full game and my progress was carried over. I guess both version (demo and full) just use the same location for savegames.
