If you want to edit the CFG file it is located in the gamesdk folder of your game's installation. Interestingly enough it didn't already have entries for mouse sensitivity, FOV and other things. (maybe someone can suggest a reason why? Introduction of potential instability?)
Anyway you can edit this file with the following entries and values:
; Mouse Sensitivity
cl_sensitivity = 80
cl_sensitivityAim = 80
cl_sensitivityDrone = 80
; Field of View
cl_fov = 90
The values are what I use, obviously you can put whatever values suit you.
Also, if you have Sniper Ghost Warrior 2 and 3 you can edit their CFG files with the same entries and values (except maybe FOV and drone for SGW2).
