Is there a way to toggle back to pixelated (original) mode with no high res rendering?

Not something "like" that, exactly that. Those are the original graphics.

I own only the originals, so I wouldn't know for sure how to do it, but the 1 & 2 25th anniversary editions say that you can in their store page:

Optional retro settings: play with original graphics, original music and even the original controls (mouse pointer)
So, if it the game did not come with any instructions on how to do it, and it is not clear from in-game menu options or something similar, you should contact GOG support and ask them how to do it.

--- EDIT ---

Ah, I see they did the old "but you can have the old version too" move.

From a review in the store page:

The only saving grace is the original game is available as a bonus in the gog goodies (it's "Legacy version").
You need to download a separate installer from the "backup & goodies" of the game

Maybe a bit too late but at least the Android version allows you to do so, so I don't see why the PC version wouldn't (I am also lucky to just own the classic version).

However, I saw in the store page that the old classic versions are offered as "extra" in the goodies section, so you may still install the original version and play it with Scummvm, which is 1000 times better!
You get the original games along with these, so I see no problem at all...;) Play the old if you don't like the new. If you aren't totally clueless you can use SCUMM and use the GPU filters that you prefer, etc. Nobody loses here that I can see.

Got the 25th anniversary on my mobile, and got the option to render the original graphics (still, there is a permanent icon in the top right corner of the screen, that is annoying).

But seems like they include the original with this, so in case the PC version of the 25 th anniversary has any problem, you can use that (I am using the original game with Scummvm: you can do the same).

If you want 100% accuracy (fill as much as the screen as possible, keeping a 4:3 aspect ratio, linear scaling (original pixels)): in the graphics tab, select Graphics mode 3x, Render: VGA, Stretch mode: Fit to window (4:3), Aspect ratio correction and Full screen mode
