I'm trying to stream gameplay of Simon the Sorcerer 3D and it's having problems, partly from going full screen. Does anyone know if I can play it in windowed mode? Thanks

Have you tried going to the install location and running the simon setup executable and unclick the Multitexture effects option? This cleared up my performance issues on windows 10. I do not know of a solution to remove it from full screen.
