When I installed the game from discs, I could enter the setttings and make Vikings and Byzantines into playable factions.

Does anyone know I way to do so with the GoG install?

(I know the BtS have a version with this, but I prefer the original game)

I suspect that was either a mod, or you're misremembering. The Vikings and Byzantines were introduced in the expansion packs and they do not exist in the base game install.
