How are their vanilla versions?

How will have they aged?

Well, I've played the first three and the 2nd one with the BUILD mod is the best pirate game with the most features I know of.

Hm... cannot post links... google "piratesahoy potc build mod"

(and it's still being worked on!)

I have played their pirates of the caribbean(not on gog) and now abandoned ships and would say potc is the better of the two.

I would also say that they are both pretty terrible(buggy, unbalanced and badly designed).

Personally I would say AoP2 is the best and POTC/Sea Dogs 2 is the second best, it's just too bad that POTC isn't on here.
