A good thing to know clarified by user @pgbp88 about Bloody body effects missing on Resident Evil PC releases:

The missing effects is an issue that is in both PC ports, Dreamcast and Nintendo 64.
They are only present in the PS1 and Game Cube versions.
Gemini has said he plans to restore them in a future update of his Classic Rebirth patch.
Interesting to know for those that remember those blood effects or can still emulate the console originals.

4. Official Capcom Patches for Updated .exe Files (Found in Classic Rebirth's Resources pages)
5. Teamx's HD Mod (Resident Evil HD Mods)
6. Seamless HD Project
7. HQ Audio mods*
8. HQ Video mods**

* = It's hard to say if TeamX already comes with these.
It's better to (install them) just make sure, since the HQ mods have been updated since TeamX anyway

** = If you are happy with the movies, then stay with them, otherwise check out the multiple movie mods
Whether it's the HQ ones, or the ones that remove subtitles.

For RE1 Classic REbirth, you don't need the command since it can set the save folder in config file. But RE2 Classic REbirth doesn't have that option.
I am glad someone has put this here for others to find what they need to mod the game easier, also for everyone helping to make the game available with the mods as lets be honest they are a great step up to the base game while keeping the originality there.

What is the benefit of installing Classic REbirth over the GOG versions? Genuine question as I'm trying to figure out if I should stop playing the GC version of RE2 and switch to PC.

Biggest thing you'll notice right away... you know how the game stutters or pauses every time you change camera angles on any console version? That doesn't happen on any PC version, so that is a plus. There is a setting in DuckStation that fixes this, but I don't know if it's on Dolphin. I know it's not on FlyCast.

Any PC version of re2 has a Hard Mode. re2 is notoriously the easiest fixed-camera Resident Evil game. I guess this depends on you, but playing the Hard Mode is the biggest draw for me, as Normal Mode is just not fun, and barely survival horror. Hard Mode is available on the DreamCast version, but it contains the stutters mentioned in the first point, so it's not ideal.

GOG re2 has some issues... it plays as the two disc version of the game, so you have to exit and re-load to change characters, some rooms don't have music that should, there is no controller vibration, and it has no base modding support. Classic Rebirth re2 makes the game play as one disc, fixes the rooms that don't have music, has controller vibration, and it has modding support. Those are the major differences. GOG can (probably?) fix the music issue, but re1 also didn't have controller vibration, so I assume that will remain. Ditto on the 2 disc thing, and the modding support is up to the community, I suppose.

Other than that, and besides Hard Mode, they are all pretty much the same game.

- Native resolution upscaling (i.e. not just 640x480 plainly upscaled) or a retro mode if you prefer 240p
- More color options for textures (i.e. you're not forced to play with crappy red tints)
- Better framerate and less sloppy rendering in general
- Better controller support (+ vibration, health on LED for DS4/5)
- Optional features from future games (tactical reload, quick turn)
- Can disable censorship for all modes or force auto aim for all modes
- The save/load screen doesn't suck
- Mod support
- No need to switch exe to change character
