and last of all, is there a way to hold the freaking plane steady in Red Baron 3D without engaging autopilot? when i try to fly without autopilot, the plane constantly noses down.

There is a reference card for RB1 in the Bonus Content available from your "Account" page. Just click the Red Baron game box and the bonus content shows up on the right hand side. I played RB1 way back when it first came out (what a thrill back then), and there is no eject button. Back then, men were men, and they went down with their planes. I'm not even sure parachutes were being used yet.

Can't help (yet) with RB3D as I'm noticing the same thing and haven't started digging into it yet.

Shift + A is the level flight autopilot command.

The nose down/instability problem could be as simple as you are maybe hitting the tab key which turns the engine on/off. It could also be an engine torque effect. The real planes were supposed to be a handful to fly and that is supposed to emulate it. You could try turning down the difficulty settings and see if that helps.

Draggon is right. You fly or die. Bailing out = death since the powers that be refused to give the pilots chutes. No bail out command until RB3D.
