I just started this game, and I'm going along relatively well with just one or two savefiles for now. But I wonder if, eventually, there might be points where I can get stuck in an unwinnable situation (for example, if I miss an item somewhere and the game doesn't allow me to go back and get it, or if I can save the game even when I'm headed for a game over).

Do I need to be careful of something in particular? If there are none, that's good. If there are only a few, I suppose I can get informed in advance and not be worried until the time comes. But if there's a lot of them, I'll just play with a guide, because I don't like the idea of having to reload an old savedata. I guess you could say I swear by the Lucasarts school.

No, as far as I can remember there are no unwinnable situations in RoTH, there are however some truly frustrating mazes that all look alike and you have no automap (and sometime no map at all) I recommend making a save at there beginning just in case you need to go back to the start to pick up an item.
Its's a sort of open-world game. As you progress through the plot, more and more doors in the mansion will be unlocked, allowing you to gain access to new sections in addition to the previous ones. Near the end of the game you can explore practically the entire mansion, from the typewriter room in the first chapter, to the dark temple below. Although there's generally no need to revisit rooms you explored at the beginning of the game, it's reassuring to know that you can return to pick up something you've missed. The same goes for the other worlds. In each there's a particular item you need to obtain, and once you find it, you don't need to return.

In short, no unwinnable situations, just remember to hold on to any odd item you pick up – they usually open doors or portals.
There are a few rare places where you can save the game in an unwinnable situation (for example after picking up the sword instead of the dagger before meeting Belial or the various ways you can fail the Raquia challenge), so I suggest keeping separate savegames over time

And there is one time when you should absolutely not save: When standing on a movable platform. Their position is not recorded in the savegame, so you will usually fall down after reloading. Usually you just take some damage, but if you are low on health you could end up saving your game in an unwinnable position.

Also it is possible to place critical items in spots where you can't reach them anymore, but you'd have to do that on purpose.

This is where I deleted the game and all my saves. Seems like I made the wrong choice of weapons. I never was aware there was a wrong choice. The "attack door with goblet" thing was bad enough, but the "attack Belial" (with the wrong weapon) option still doesn't involve any attack on him, so there's so chance to learn from your mistake.

Could've been worse, I nearly bought this stupid game for Christmas back in '97, so I would've been stuck with THAT control system on the UK version.

There's barely a minute of gameplay between choosing a weapon and encountering Belial, so it's hardly a "dead man walking" scenario as the consequences become apparent almost immediately. The standard guidelines for computer games apply – multiple saves are a must. If for no other reason, the single savefile might become corrupt due to a hard disk error.

I had the saves, just wasn't willing to put up with the game any more.
