I finally installed this and gave it a go. Once I found out I had more than three balls I shut down the game that was in progress to try and go change it. Couldn't find the option anywhere. Is there a way to only play with three balls per game?

I'm wondering the same thing. Some pinball games give you an option in the settings, but I certainly can't find it in this game. Like you, I prefer the traditional 3-ball game.
