Hi,
just wanted to share that I've managed to run it in Linux with wine + dxwnd with success.

Most problems were with too fast menus and sound being glibberish.
Looks like setting "Limit FPS" in "Timing" options solved it.

Other options which seems to me had an impact were:
- dxwnd hook enabled
- run in window
- window floating
- hook direct sound enabled

Menus still are bit speed up - but game itself looks ok for me: sound is nice and ball runs smoothly.

Mac user here. I don't have the GOG version, but am using my original CD copy with a nocd patch applied. I assume what works for my case will be the same for the GOG version. I'm using Wineskin and what works for me is to use the engine "WS9Wine1.4.1NoXInput2". This gives me flawless game play and normal menus. The only problem I do have is if I need to change the key bindings. In that case, I temporarily change the engine to "WS9Wine2.16" just for setting up my controls, then revert back to the other one. Hope this helps.

I'm suffering exactly that fast menus and audio glibberish trouble. Where exactly is that "Limit FPS" option? Is it a Wine or an in-game option?

It is a dxwnd option. DxWnd is a windows program - to be started by wine. You can find it on sourceforge.
Then you create in it a 'target (Edit > add)' enter path to game exe and set options like mentioned 'Limit fps'.

Works fine in wine-staging (to be precise, wine-tkg) without any additional tools required.
