Hello, I wrote a Lutris scripts to install "automagically" Prince of Persia - Sands of time - GOG edition on Linux.

First install Lutris:
https://lutris.net/

then go to the Lutris Prince of Persia - Sands of time page:
https://lutris.net/games/prince-of-persia-the-sands-of-time/

Choose this script and click install:

- Wine GOG Widescreen
