I've been walking around the same easy difficulty maze for a while now and I can't seem to find any way to change the setting to a medium or harder level. I've tried talking to all the modrons in the area, I've tried talking to the toy cube, I've tried leaving. How do I go further into this maze? I'd really like to get Nordom as a party member. Do I literally just need to change the difficulty level in the options? What do I do?

Speak to the modron in the middle of the control room and ask him about everything. Offer to become the new director, then tell him to create a new maze.
