The manuals could not be downloaded separately and they are not in the start menus or game install dirs after install.
Ideally I would like to know what the keys are so I can flip the paddles :O
And why does pressing ESC hang the Pinball Dreams game does anyone know?

As default you need to press left- or right-Ctrl to flip in Dreams Deluxe and left- or right-Shift in the others.
If you press Esc during the game you need to press y/n, it says so in the display.
The flipper controls can be changed with F10 in Dreams Deluxe and F5 in Fantasies Deluxe.
As for manuals, I don't really know if these games came with other documentation other then how to install the game, you might try replacementdocs but the site is down at the moment.

Wishlist: Manuals. Even if the original doesn't have a manual, GOG should list the controls. Unless finding out is somehow part of the game.

A manual would be nice to understand how some tables work. Like the bonus points and all of that.

After extensive searching online, I found a text file version of the Pinball Dreams Deluxe manual which includes the table rules for all Pinball Dreams and Pinball Dreams 2 tables.
