Am I the only one thinking that a party with 5 or even 6 characters makes the game damn too easy? I am playing it on the second highest difficulty (Path of the Damned cannot be changed in-game!! WTF?!) and it's too easy with 5 characters.

Yes I know, I can throw away other characters and play only with 4 but every character has an interesting story so I don't want to miss them.

Oh my :(

After you reach a certain level and get to the appropriate point in the main plot, you'll have an option to raise the difficulty a bit. The game will recognize that your characters are above suggested level and propose to raise the difficulty. But in general you're right. The game can be easy when playing with a full party. But this doesn't mean that you won't encounter any harder fights later in the game.

Yes, they do. Once you add them to party once again, they’ll have level equal to your main character.

Dismissed characters will level up only if you send them on stronghold quests while they're not with you. There should be enough quests to have them roughly same level as you, but you should remember to rotate the ones who go on quests.

Ooops, my mistake then. My memory is not good enough I guess. :)
