I just found out that Phantasmagoria (1 and 2) are both delivered through SCUMMVM emulation. So why is it only available for Windows? I am confused...

late response but best guess is the rights holder(Activision) won't give the okay for a Mac version as GOG can't just take a game on the store and just release it for other OS's or systems without approval from either the devs, publisher or rights holders, unless it's a game owned by GOG themselves like the SSI era AD&D games.
I gave it a try on macOS and it worked.

I had to fumble a bit to get it to install.
I used a wine wrapper for the gog installer to work but as soon as the game was installed, I moved the files somewhere more appropriate, removed wine wrapper and its files and added the game to scummvm.

You can probably skip wine and use a different method to install this (use a win VM, bootcamp, a separate computer). Once it is installed you just need the Phantasmagoria folder under C:\GOG Games\. You can move it anywhere as long as your mac can reach this folder. Just add the Phantasmagoria folder to scummvm.

I don't know if the default options work (because I always browse the settings before playing).
The only settings I changed are MIDI and MT-32 which I have set to Apple DLS Software Synthesizer.

Both background music and audio work for me.
You should be able to use ScummVM to play this game.
ScummVM is (also) available for MacOS.
That way you can play the DOS/Windows version on MacOS.
