Some days ago thanks to a gog user that posted the link here, I downloaded the demo of Omertà.

I installed it and then i ran it and... Surprise! The demo is in italian! All in italian both audio and text!

But i download the demo from StrategyInformer (an english site) and that site was given by a not italian gog user, so, why GOG and Steam didn't include italian language in the languages available?

Ah a small note, in Italy FX Interactive will publish the game and they assure that the game will be in italian.
Ok, it's another discussion but so...

How many languages did the demo have into?!?!

I'm asking because I prefer to buy the game on GOG, but if I can find the game in my language and for a cheaper price...

I don't want to betray GOG!

So let me know the truth about italian language on Omertà!

I hope that GOG can add italian language, i don't understand why they not add our language in their games...it's ridicolous.
For what it's worth, it's not up to GOG to decide which language packs are released in their versions of the games. Not with Omerta, not with any other game. GOG isn't a developer nor a publisher, they're a digital store, and they have to work with what publishers and developers allow them to work with.

My bet is that Kalypso didn't release a version of the game that supports Italian neither on GOG nor on Steam, and that's not GOG's or Steam's fault, it's Kalypso's.

GOG has gone beyond their duty with a lot of games, trying to unearth lost language packs and reaching agreements with developers, publishers and rights owners in order to get the best product they can for their customers many times, so I wouldn't blame GOG. Try reaching out to Kalypso instead, it's because of them you're not getting an Italian version of Omerta on GOG.
It might be a bit more difficult than usual in this case, as I suspect that FX Interactive handled the Italian translation in-house (which they often do, though not always, as far as I know).

So it might well be that even Kalypso doesn't have the rights to the Italian translation, which would mean that an additional deal between FX and GOG might be necessary (which equals additional cashflow towards FX, which might or might not outweigh the additional purchases due to the additional language option).

For what it's worth, I know of at least one game on GOG (Lucius), which was published in Italy by FX but is also available in Italian here.

Let's just hope that the Italian version eventually makes its way here or, if not, that FX will release their own Gold Edition, once/if the fabled 1.08 patch is out. They usually do that, once a game has had all its expansions/DLCs and final patches released.
