Just to add, for MI1SE, the talkie edition is the single best version you can have. Not only because MI1SE's graphics are much worse than the original VGA, but also because they completely messed up the timing in the MI1SE interpreter. You get long delays between lines, completely ruining the game. This is all gone in the talkie version -- the timing is great.
I've been messing around with this and the MI1 build is pretty nice.

Here's a tip that the Readme failed to mention: If you prefer playing in ScummVM with the original MIDI soundtrack and you like the environmental ambience tracks, besides copying track25.ogg through track29.ogg to the game folder, you can also copy track23.ogg and track24.ogg to add those environmental tracks from the CD-ROM edition. It's up to you if you want to copy track22.ogg. If you do, you'll add the waves and seagulls when you're on the docks, but lose the intro music.

The MI2 build is a lot rougher, as you might guess from the fact that it's only v0.2. It works, but there are no options to use the SE soundtrack or even the CD soundtrack, so you're limited to General MIDI in ScummVM and only MT-32 (the "r1" option) in DOS because that version crashes if you try General MIDI (the "r" option). It's disappointing that development ended at this incomplete state, but MI2SE allows for speech and the CD soundtrack over the classic graphics, so there's not as much need for separate versions of that. I mention all of this, though, to potentially save people an hour of encoding. If you want the SE or CD soundtracks, don't bother with the talkie version of MI2.

Does these preferences works in ScummVM? Shows nothing when i press any combination (works in DOS version) and there is no monkey.cfg to manually set this options..

Preferences
===============
- CTRL-a toggles narrator mode.
- CTRL-p toggles Spiffy mode between "SE based VGA", "EGA scan" and "no closeup".
- CTRL-q toggles subtitle mode between "keep original text" and "match voice acting".
- Preferences are stored in monkey.cfg, which is loaded automatically whenever a new game is started.
- Music volume is saved whenever one of those toggles are used.
- Savegames contain their own settings overiding monkey.cfg when loaded, except for music volume.

Oh, whoops. I missed that remark above and I guess that I skipped past the intro when I was testing, so I didn't notice. Thanks for pointing that out.

It's probably that the game checks for Track 22 and, if present, it assumes that you have CD audio and disables the MIDI music. That's too bad.

Those could be functions of monkey.exe, which is bypassed when using ScummVM.

Yeah, maybe! I don't mind using dosbox, but for MI2 Ultimate Talkie i want to use adlib sound effects + roland mt-32 music which only works in ScummVM (or in dos version with patch which not compatible with ultimate talkie version..)

I've just found that it's possible with the talkie edition. All that you need to do is download that patch (from here), extract out SOUNBLAS.IMS to your Monkey2 folder and rename it to ADLIB.IMS. Then, as usual, run the game with the 'a' parameter for Adlib. Note that I haven't tested this beyond the first few screens, but it works so far.

Is anyone able to get the special edition music working in Monkey Island 2? When I use the builder, I get the voices just fine but it uses the standard PC soundtrack.

I just managed to install it! I wanted to be able to play with the old graphics but with voice acting and the new music! So far it works flawlessly.

Turns out you don't need any programs to extract the CD version. The file that is mentioned, Monkey1.pak, should already be in your installation folder. Just place the MI1_Ultimate_Talkie_Edition_Builder folder in the same folder that you have installed the Special Edition (for example, in my computer it's D:\GOG games\Monkey Island 1 SE). Make sure that the Monkey1.pak file is present. After that, follow the instructions.

When you have everything installed and go to import the game in ScummVM, din't stop at the first folder. Open the MI1_Ultimate_Talkie_Edition_Builder, and then the new folder that the installer creates, so ScummVM will recognize the game.

It took me some time to figure out everything, so if you have any other trouble let me know and I'll try to help. :)

Ah, I'm such an idiot! Didn't realise I had to look for the game in the new folder it created. Thanks, it works great! :)

Would you happen to know if it's possible to enable subtitles in this edition of the game? EDIT: Nevermind, I see the option in the settings.

Yes it is! While playing, go to the ScummVM menu (default is F5) and select Options, then Audio. You can choose between voice acting, subtitles, or both
