Usually in DOSBOX we can

mixer /listmidi

to get a list of available midi devices and put the # of the one we want here

[midi]
# mpu401 -- Type of MPU-401 to emulate: none, uart or intelligent.
# device -- Device that will receive the MIDI data from MPU-401.
# This can be default,alsa,oss,win32,coreaudio,none.
# config -- Special configuration options for the device. In Windows put
# the id of the device you want to use. See README for details.

mpu401=intelligent
device=default
config=3

However, while this has worked for all other games I've played -- including MM3 Isles of Terra (for MUNT) -- World of Xeen for some reason seems to completely and totally ignore this. I also ran the install.exe and changed the sound settings to Roland there as well. Any reason World of Xeen won't let me use my SC-55?

Does anyone here use either MUNT or real hardware with this game?
I think that the default config for the gog version of Xeen uses SB16 FM synthesis rather than midi. You might need to run INSTALL.EXE from DOSBox to configure Xeen to use a midi device first, then the updated DOSBox config could take effect.

I tried running Install.exe but that did not work. I did find the issue though, it is with the config file.

By default when you install MM4+5 the config file reads:

mpu401=intelligent
device=default
config=#

when it needs to read

mpu401=intelligent
mididevice=default
midiconfig=#

adding midi before device and config immediately made the game recognize my sound canvas... is there a way to contact GOG so they can fix what amounts to a typo in the config file for future users?

You can use this form here (which is for submitting solutions you found). Not sure how effective these are though.

Don't bother using MIDI for World of Xeen. Unlike Might and Magic III, they kind of just threw MT-32 support on to Xeen without testing it very much. I got it to work with Munt, finally with all of the proper sounds, but it crashed constantly.

After going through Hell and back, and doing some investigation, it turns out they never really finished testing it (they put all of the work into making the SB 16 soundtrack). It never worked properly and even crashed the real hardware back in the day.
Xeen works fine with MIDI synthesizers. You just need to run the game's original sound card setup utility to choose MT-32 or General MIDI and then configure DOSBox as people mentioned above.

I've played it this way with a real MT-32 and SC-88, as well as with Munt. World of Xeen is composed with the LAPC-I/CM-32L in mind, so it has some minor issues on my real MT-32, but it still beats the pants off of Adlib / Sound Blaster OPL2 music. If you don't believe me, compare MT-32 and OPL2 music in the Darkside intro.

Also, I generally import my GOG games into D-Fend Reloaded so that I can run them with SVN builds of DOSBox and tweak the configurations more easily. D-Fend also does a great job of configuring DOSBox to use the chosen MIDI device, as the numbers can shift around.
