Like the title said.
MM6, MM7, MM8 are very classic of the series.
I'd recommend to start with MM7.
Some may prefer MM6.
Definitely try MM3 and MM6 - those are games from different eras.

MM 7 is good game, but very poor in comparison to MM6. So I'd definitely recommend trying MM7 after playing MM6 or you won't get the actual feeling of series.

And if you are completist and can stand CGA graphics, start with MM1 all the way, but keep in mind that first two games play very differently from MM3+ and MM6+. It takes only like 15 minutes to test MM1/MM3/MM6 to get initial feeling yourself, and they are all in 1 pack anyway.

What possible technical issue could I ran into with the games? And in which way can I fix them? Are there some fan-patch or something to improve performance and the like?
I'd recommend you to start with MM7. It's in the same engine as MM6, but you won't be discouraged by scores of enemies and huge dungeons. Some people prefer those, so that's why they recommend MM6. But I've found that MM7 is a much tighter experience gameplay-wise. If you don't mind a clunky interface, I'd say MM4 is also a great title to get you into the series. It's easy, has the best exploration, and also gorgeous 2D sprite graphics. So it just boils down to what you prefer: restricted grid-like movement typical of "blobbers", but packed with content, or unrestricted movement in a 3D environment, even though maps can feel empty due to their size.

No need to configure or patch them - they run out of the box. There are some fan-made patches there, but they are mostly about cosmetic additions and some player-made content. Their performance is very good (except for MM9, but I'd leave that game for last. People might argue what is better MM6 or MM7, but everyone shares the same consensus that MM9 is better be left for last.
Personally my favorite MM is 6 its the first one I played so I can say it is a good starting point but the nice thing about start with MM7 is you start the game with a guide who gives you a basic tutorial of how the game works. The other thing too is as great s MM6 is half the spells do not work.
My personal favourite is MMVII. I'd also recommend that you start with either this game or MM VI. I did not play VIII yet and I'd not bother with IX as that game seems to be an unfortunate and unfinished project, although storywise it might be good. I played it some time ago and I don't quite remember the story that much.

Older MnM games III and IV+V can be quite fun too. Especially IV and V have nice "cartoonish" graphics. However if you are no accustomed to playing older games you might get a bit confused, especially if you start with MM III. I myself remember getting lost in fountain head, the first town. I also took me a while to find out where map was and that I can trade items in between my characters etc. Other than that I'd definitely recommend trying those too.

Connections between games of the series, except for IV and V which can be merged into one big game called World of Xeen seem rather loose. There is indeed some backstory, but you mostly wont feel it until late into the game. So which ever you start with, it should not matter that much.

edit1. If you ever played Heroes of Might and Magic series I to IV you might also find some references inbetween the series like characters or units. Especially in Might and Magic VII, maybe also World of Xeen.

Personally, I never liked MM1 and MM2 for their saving options. You can save ONLY in town. Probably it is better with DOSBOX emulators which have save-state function (unofficial DOSBOX build), but personally I found such saving restrictions to be totally game-breaking.

MM3+ let you save anywhere (or almost anywhere).
I started with 1 and loved it.

Give it a try at least.

Is there a way to improve the controls? From what I've seen they seem realy clunky

Edit.
And thank you all for the help

In what way?
It's a grid based game, so you shouldn't try any continuous movement. If that's what you mean by clunky.

What I meant by clunky is that the game, from what I've seen, has you pressing lot's of different buttons to do all the various things and that doesn't look too comfortable.

I see. Well, you'll have to do it for spells. Might be tough at beginning, but I quickly got used to it though.

The only thing I did in MM2 was create keyboard macros for "First Aid x10" to speed things up a little, since First Aid is the most efficient healing, but takes long time to fully heal for high level characters.

If you do find it too difficult, keyboard macros can be your friend.
