Anyone know how to fix this;

Basically, the shapes on my weapons are warped. The MP-40 for example, doesn't even have a proper barrel, it looks like a jagged, 30 degree diamond shaped stick coming out of a cylinder, not quite how I remember it (nor how the screenshots found in google show it). The M1 Garands rear adjustment knobs etc don't show up as proper discs/cylinders, but rather warped, spiky balls that resemble kidney stones rather than dials.

The options don't appear to have anything in regards to LOD or weapon quality, any classic Quake-engine pros able to help me out here?

Just examining your screenshot with the one from MobyGames. If you look carefully, the shape of the model is in fact correct. What appears to have happened with your screenshot is that the skin of the gun is misaligned and therefore some parts are stretched and other parts squashed or covered.

First thing I'd try is to mess around with the graphics settings. Maybe a lower resolution will help (try a resolution from more around the time the game was released).
Fixed it,

There was definitely an issue with the weapon shapes, the MP40 looked like a diamond on a stick, it was an issue in the cfg files that lowered the quality of the weapons, although it must be hand edited because there is no way of changing it in the options.

Do you mind sharing the fix please?

I could not honestly remember the change I made anymore.

However, it is possible; check around for the games config file and have a quick browse through it, keep an eye out for graphics options and I'm certain somewhere there may have been a model quality or LOD setting that was set to low. When set to high, the models fixed up.
Thank that gives me a starting point!

I also have the original disc version which I can try on an old Windows 98 or XP computer to look for differences. To be honest I still struggle to see exactly what's wrong with the graphics but then it's been so long...
