Looks like they first need to catch up with their bearinthenight.itch.io website, which doesn't even reference its existence although it's been out on Steam nearly two months now (under a slightly different name Lust Academy Final) and with 2 DLCs (Beyond the Veil & Shadows Unleashed).
I'm hopeful they're fixing some bugs before bringing all that to GOG in the first place, because at least some typos reported on Season 3 are still around on GOG version, and I'm under an impression that pushing updates to GOG is not a simple process from publisher's perspective. There are already post-launch updates on Steam.
By the looks of Patreon devblog, they seem to have lots of other things going on as well; alongside with comicbook side projects and other VN stuff they're also already actively working with fresh ideas for their next game, which personally I'm not against.
To be clear, I want to buy the final season from GOG too, it would not make sense to have parts of a game on different platforms. Just saying why it seems not to be top priority right now. But if they want the money, better be at some point before we customers no longer care about it and move on.
