Currently working through Gorrister's story (this game is utter brilliance by the way) and I'm in the meat locker, having found Edna and Glynis. Now I've cut out Edna's heart and offered it to the jackal and I've also gone back and cut out the beef heart. Trouble is, I've done about everything I can, nothing seemed to help me make progress and the walkthrough says that I should try to get "Edna off the meat hook", which will cause her to fight me and she'll drop a key to a cabin inside the Zeppelin.

No matter what I try, I never get an option to move Edna, no fight starts, no key.

Am I missing something, is this a bug, what gives?

do you have the milky liquid?
that's how I got Edna off the hook.
I'm guessing it's not a bug you are dealing with.
The milky stuff is in a bottle found near the cages up in the zeppelin.
So you give the bottle to Edna and she should be able to leave.
Or was it that you have to talk with her about it I forgot.
I have it but he refuses to give it to her. I'm worried it's a bug, because at some point you are offered the choice "Get Edna Off the Hook" or "Carve Edna's Heart Out" which I obviously did and then she becomes non-responsive, with the exception that I can take her heart out as many times as I wish (it only appears in my inventory once though.) Can't feed the milky liquid to Glynis either.
Also, in one walkthrough, it says I should kill Harry with the knife, though I don't really see how that is necessary...maybe something fails to trigger with Edna because Harry still lives?
hm, I'm not sure how to get out of exactly that situation.
I went without taking Edna's heart, I think.
About Harry, I didn't kill him either.
It's just that, that's how I got the zeppelin moving, with Edna alive and kicking, taking the liquid, running up to the zeppelin cockpit. Maybe there is some other ways...
My memory is terrible, but I can go through the scenario again when I have time and check out how I did it.

I re-did it, sticking to the walkthrough religiously.

Apparently, it's a fail-state if you take Edna's heart, you can't complete the scenario but the game does not give you a hint or indication of this, thus making you believe that there may be some other way to progress. Indeed, I did it "properly" and finished Gorrister's story properly.

That's the only thing I don't miss about the adventure games of yore. The writing was absolutely brilliant but the mechanics squeaked and pulled at the seams. I never got a red flag saying "Hey dude, restart, this scenario is now undoable."

Anyhow, thanks for the help!

Yeah that's what the game seems to be lacking, a warning that there's no way to complete a scenario if you fail to do things properly.
Maybe it's intended to increase the desperation? :)
edit: by the way, it says in the manual that using the book / reading hints means decreasing the feeling of bravery or what ever, that is represented by the character picture box in the game: the brighter green the background the better, and darker it gets means worse is the feeling of self-hate or whatever.

In order to give her the milk, Gorrister needs to not feel guilty anymore. For that i just add to go to Edna's room using the key and read the 2nd entry of the log book.

I know i'm 5 years late but maybe someone in 5 years will be stuck like me for a while.

Don't give her the milk. Before trying to take her down you need to get the rope back, use the knife to cut it off the mooring. Then talk to Edna, when she grabs you don't trust her and don't give her the milk, she'll drop the key and let you go. Then use the rope on her and you'll tie her up and take her with you.
